Andrew and I have a bad habit of letting food go bad in the fridge.  This new farm lifestyle I’m attempting is hopefully going to push us into a more sustainable lifestyle – canning, storing, etc.  I’m determined to make better choices about food, including the money I spend on regular groceries.  No more food going bad in the fridge, when I can throw together a meal, such as the recipe following, and have it come out so delicious – just from what’s hanging around in the kitchen!

2 Boneless chicken breasts, whole

3 potatoes, chopped into pieces

Handful of carrots, chopped into rounds

Some onion (to taste), chopped large

(Put all in a glass baking dish)

4 cloves garlic, minced

A sprig of fresh rosemary

A handful of fresh chives

Dash of dried thyme

Dash of dried cumin

Dash of dried oregano

(Add all this on top of the veggies and meat)

Soak the lot in olive oil.  Bake at 375F for 30 minutes.  Turn chicken over.  Bake for another 25-30 minutes, or until chicken is cooked through.  Enjoy!
